Lazy Lunches That Are Actually Good For You!

Sticking to healthy eating can be tricky if you are always short of time. It’s all too tempting to grab a fat-laden ready-meal, or pick at a bit of what the kids are having when you’re in a hurry. The trick is to always be prepared and ensure your cupboards are stocked with foods which encourage healthy snacking and healthy meals.
Coupled with a few key store cupboard ingredients, you can have a delicious and good-for-you meal on the table in less than 20 minutes. STICKY CHICKEN AND MANGO STIR FRY
Serves: 4
Preparation time: 10 minutes. Cooking time: under 10 minutes
Per serving: 431kcals, 9.7g fat, 2.5g sat fat
Ingredients:
350g chicken breasts, cut into strips
6 tbsp soy sauce
1 tsp Chinese five spice powder
2 tbsp light soft brown sugar
1-2 tsp Very Lazy Hot Chilli Paste
225g dried egg noodles
1 tbsp groundnut oil
1 tbsp Very Lazy Ginger
2 tsp Very Lazy Garlic
2 carrots, peeled and thinly sliced
1 green pepper, deseeded and cut into chunks
1 small mango
THE METHOD
1. Place the chicken in a bowl and stir in soy sauce, five spice powder, sugar and hot chilli paste. Toss to coat and leave to marinate for a few minutes.
2. Meanwhile cook the noodles according to the packet instructions. Drain and refresh in cold water.
3. Heat a wok and swirl in the oil. Add the chicken (reserving the marinade) and the ginger and garlic and stir-fry for 2 minutes.
4. Add the carrots and pepper and stir-fry for 2-3 minutes. Pour over the remaining marinade. Scatter over the mango and add the noodles. Turn two to three times with a spoon to combine the noodles and sauce and serve immediately.

Adjusting diet so the low Glycemic levels are predominant can be accomplished by reducing intake of foods with high glucose ratings such as white bread, processed cereals, candy, chocolate bars & other junk food while making foods with lower glucose levels a bigger priority in the diet.
